Spinach with Eggs (Yumurtalı Ispanak)





















Spinach with eggs is the ultimate comfort food enjoyed for brunches, lunches or easy dinners when you need them. Although some make this dish with ground meat, I think the best version is without them. Having said that, this is a very flexible dish; you can add ground meat, sausages, beef franks or tofu if you wish.





















serves 1-2 people
1/2 lb spinach, fresh and chopped 
1 small onion, finely chopped
2 eggs
2 tbsp butter or olive oil
[optional: 1/4 lb ground meat OR 1 beef frank, thinly sliced OR tofu]
1 tsp red pepper flakes
salt and pepper























-Heat olive oil on low-medium in a skillet that has a lid.
-Add onions and cook until soft but not browned.
[-If you are using some sort of protein, add them once the onion is cooked and before adding the spinach]
-Add spinach and sauteé until spinach is tender and changes color.
-Season with salt and black pepper, and spicy pepper flakes if you like heat.
-Prepare two holes on the spinach bed for eggs.
-Break eggs into these holes.
-Put the lid on and cook until eggs are cooked with a runny yolk.
-Serve with crunchy bread. Spinach with eggs is also very good with crumbled feta or parmesan and any kind of spicy sauce like Tabasco on top.

  5. This DOES look great! I was just looking for breakfast ideas. Is that sumac you have sprinkled on top? (even if it isn't, I'm going to put some on mine, as it goes wonderfully with spinach. I won't forget the hot pepper flakes either.) Thanks for the great idea, and I have everything on hand right now too.
